Our Herd
Our commitment at Catskill Farm & Livestock Co. is to produce the finest, cleanest, and most nutritious beef available while maintaining USDA Organic and Real Organic Certifications and 100% Grass Fed cattle.
To achieve this, we’ve carefully developed our herd through strategic crossbreeding, combining elite Wagyu bull genetics with top Registered Angus cows.
Our Wagyu bulls are selected for optimal marbling, ribeye size, agreeable temperament, and the propensity to produce smaller calves. Our Angus cows complement these characteristics perfectly, selected for their docile temperaments—critical for farm safety—as well as their strong maternal traits. These include the ability to raise calves with outstanding weaning and yearling weights, and superior foot and ankle structure, dramatically reducing health and infection risks critical to our Organic system.
The combination of Wagyu bulls and Angus cows leverages the power of heterosis, or hybrid vigor, resulting in exceptionally robust, healthy offspring. While Wagyu calves can be smaller and delicate, Angus cows are adept at easily birthing and growing them rapidly, making this pairing ideal. This breeding strategy ensures that calving is low-stress for the benefit of cow, calf and the ranchers.
At Catskill Farm & Livestock Co., we aim for—and achieved this season—a 100% unassisted calving rate, considered the pinnacle of cattle husbandry. Our cows lie down to birth their calves in lush spring pastures without intervention, after which they and their calves quickly stand up and nurse independently. Immediate nursing within the first 12-18 hours is crucial, allowing calves to benefit from the mother’s colostrum, packed with vital calories, nutrients and immune-strengthening properties. This natural, efficient, and animal-first approach ensures both the health of our herd, the farm and the exceptional quality of our beef.
